How to prepare Shami Rudbari + a few tips to prevent Shami
Shami Rudbari is a meat dish which, as its name suggests, is one of the original dishes of Rudbar and Gilan cities. This dish is prepared using minced meat and fragrant vegetables. This food can be found in most traditional restaurants in Rasht and Gilan. But if you want to prepare this delicious food yourself, in this article we will teach you how to prepare an authentic and delicious Shami Rudbari.
How to prepare Shami Rudbari
The method of preparing Shami Rudbari is very similar to cutlets. But the presence of different vegetables in it has created a pleasant taste that has made it different from cutlets.

First, grate the onions with a fine grater to prepare Shami Rudbari. Be careful not to overcook the onion. Then take a bowl and add the minced meat with the grated onion and some moisture, pepper and turmeric.
Then chop the vegetables finely and add to your dish. Knead the yeast well until the ingredients are smooth.
Note that if you have access to the local vegetables of Khalvash and Choghaq, you can use these vegetables in preparing Shami Rudbari . But because access to them is low, you can use a combination of basil, parsley and coriander.
Once the yeast is ready, cover your dish with cellophane and refrigerate for 2 hours.
When your yeast is well rested, take it out of the fridge and choose the right frying pan for the Shami.
Pour some oil in the pan and fry the lentils well after heating. Once the Shami’s are ready, pour them into a bowl and set aside.
The next step is to prepare the food sauce. First, peel the tomatoes and puree them. Choose a frying pan and put it on the heat, then pour the tomato paste into the pan to cook a little. Add the tomato puree with spices and some fragrant vegetables to the pan to thicken the sauce.
After the sauce thickens, we put the lentils in the sauce and close it so that the sauce goes to the lentils. After the food is ready, we serve it in the desired dish next to rice or bread.

A few tips to prevent Shami
- Use a non-stick pan for frying lentils so that less oil is consumed and your food does not stick to the pan.
- You can use some flour or breadcrumbs in the food to prevent your Shami from falling apart.
- Using a potato in Shami is also a good way to prevent falling out.
- Eggs are also one of the things that cause the material to stick together and you can use it.
