Borani yogurt
Eggplant Yogurt, also known as Mast-o-Bademjan or Borani Bademjan, is one of the most traditional and popular Iranian appetizers, made with a simple combination of yogurt, roasted or cooked eggplant, garlic, and sometimes walnuts. This dish has a delicate, fragrant flavor, and the creamy texture of the eggplant blended with the freshness of yogurt creates an exceptional combination. The eggplants are first roasted or steamed to give the dish a pleasant smoky taste, then mixed with strained yogurt, crushed garlic, and optionally a bit of salt and pepper.
