Chelo Anarbij stew

Anarbij Stew is one of the traditional and authentic dishes of Gilan Province in northern Iran. This stew is considered a local specialty and is less known in other parts of the country, yet it holds a special place among the people of Gilan and is typically served at gatherings and special events. The name “Anarbij” comes from two components: “Anar” (meaning pomegranate) and “Bij” (meaning ground or minced, referring to ground meat), clearly reflecting the main ingredients of this stew. Reezhan Restaurant describes the taste of Anarbij with rice as a delightful blend of sweet and sour flavors, combining northern Iranian taste with the tang of pomegranate.

The main ingredients of Anarbij Stew include ground meat (usually shaped into small meatballs), ground walnuts, pomegranate paste, pomegranate juice, aromatic local herbs such as chochagh and khalvash, and special spices. Some variations also use herbs like cilantro, parsley, mint, or leek, depending on local availability and taste. This stew bears some resemblance to Fesenjan but has a distinct flavor due to the use of local herbs and different seasoning. In the best tourist restaurants in Rasht, Anarbij is typically served with Persian rice, and its rich color and aroma reflect the depth and richness of Gilani cuisine.
